Mix the ingredients.
The dough should be thick with a texture like dough for pancakes.
Put mix in a bowl, add the remaining corn and mix.
Heat a Teflon pan over medium heat.
Lightly oil the pan with absorbent paper with oil every time you make a cachapa and, with a small ladle pour about ½ cup of the mixture, extending it with the ladle to form a circle of fine thickness.
When bubbles form all over the surface and the edges are dry and golden, turn them with a spatula to cook them on the other side, about 1 - 2 minutes per side.
Add cheese on top and serve.
