INGREDIENTS
For the masa
- Corn tortillas
- 4 dried ancho chiles
- 2 cloves of garlic
- Water
- Salt and pepper
- Cotija cheese
DIRECTIONS
Cut out seeds and stem of chiles. Sear in a pan. Add water just enough to cover. Soak until soft. 10 min.
Pour into blender with salt, pepper and garlic. Blend well.
Cut tortillas into 6 triangular pieces.
Add 1 tablespoon of oil on a medium-hig heat pan and toast the tortillas.
Add sauce and bring to a simmer.
Plate, sprinkle cotija cheese on top and serve with refried beans or eggs.
