INGREDIENTS
- 12 ounces of fingerling potatoes, halved
- 5 tablespoons of extra-virgin olive oil, divided
- 4 chicken thighs
- 1 teaspoon of kosher salt, divided
- 3/4 teaspoons of black pepper, divided
- 1 bunch of fresh flat-leaf parsley leaves
- 1 bunch of fresh cilantro leaves
- 1 bunch of oregano
- 2 garlic cloves
- 2 tablespoons of white vinegar
DIRECTIONS
Preheat oven to 350F.
Heat pan over medium-high heat. Add 2 tablespoons of oil. Place chicken thighs skin side down until golden brown. Turn off heat and remove chicken.
Toss fingerling potatoes in oil salt and pepper. Place in pan and place chicken on top.
Place in oven until potatoes are finished and chicken internal temp is 165F. About 15 minutes.
Mix herbs, garlic, olive oil, and vinegar.
Pour over chicken when it comes out of the oven and serve.
