Chimichurri Chicken Thighs with Potatoes

INGREDIENTS
- 2 tablespoons of olive oil
- 4 garlic cloves minced
- 1 tablespoon of fresh ginger, minced
- 1Lb uncooked shrimp, peeled and deveined 16-/20

6 tablespoons of soy sauce
- 4 teaspoons of mirin
- 3 tablespoons of rice wine vinegar

5 green onions, sliced
DIRECTIONS
In a large skillet heat olive oil over high heat. Sear off shrimp until almost finished. Still a little translucent.
Add ginger, onion, and red pepper, stir for about 1 minute.
Deglaze with rice wine vinegar, soy, and mirin. Toss all together.
Lastly, add in the green onion and serve over rice or with a salad.
Mix herbs, garlic, olive oil, and vinegar.
Pour over chicken when it comes out of the oven and serve.
