Yuca with Pork Rinds

• 1 pound of yuca
• 1 tomato
• 1/2 red onion
• 1 jalapeño
• 1 red pepper
• ½ bunch of cilantro
• 1 cup of sliced cabbage
• 1 lime
• 1/4 cup of grated carrot
• Salt and pepper
• Pork rinds

Mix cabbage, carrot, red peppers, onion, jalapeño, tomatoes, and cilantro together.

Season to taste with salt and pepper.

Boil the yuca in salted water until finished.

Sauté the pork rinds pieces.

Cut the yuca and place it on a plate.

Put the pork rinds above the yuca. Top it with the cabbage mix.

Squeeze lime over the dish after plating.
