INGREDIENTS
- ⅓ cup butter
- 1 cup chopped onion
- ¾ cup chopped celery
- 3 cloves garlic, peeled and minced
- ⅓ cup all-purpose flour
- ⅓ cup chopped parsley
- ½ tsp dried thyme
- 3 cups tomato paste
- ¼ tsp cayenne pepper
- 1 (15.5 oz.) can of red beans
- 1 ½ cups chopped okra
- 1 ½ lb. cooked ham, cubed
- 2 cups chopped tomatoes
- 2 bay leaves
- 1 ½ tsp salt
- ¼ tsp ground black pepper
- 4 cups water
DIRECTIONS
Heat ⅓ cup butter in a medium saucepan over medium low heat, and whisk in flour. Whisking constantly, cook 10-12 minutes, until a brown roux has formed
Stir in okra, onion, celery, garlic, tomatoes, parsley, thyme, and cayenne pepper. Mix well.
Add 4 cups of water, bay leaves, salt and pepper. Reduce heat and simmer 20 minutes, stirring occasionally.
Mix in ham and red beans. Continue cooking 15 minutes, until tender.
Serve over rice.
